Food Safety Modernization Act (FSMA) & Food Microbiology ½ Day Workshops
Overview:
The Food Safety & Modernization Act (FSMA) stands to change the landscape of the US Food industry. By enacting many updates and changes that focus specifically on prevention, the food industry is gearing up to respond to these new requirements by taking a look at not just the impact the product has on food safety, but also processes and environments. This half day workshop will highlight FSMA Section 103 Hazard Analysis from a facilities point of view. Sampling considerations, including sampling supplies, techniques, and frequency will also be covered. Finally, a comprehensive overview of applicable Food Microbiology Analysis will be provided, with insight into Food Safety vs Food Quality factors and result interpretation. The session will be wrapped up with a tour of EMSL Analytical’s state of the art laboratory.

About the Instructors:
Joy Dell'Aringa,M.S., RM (NRM), CFSP – National FoodMicrobiology Supervisor, EMSL Analytical, Inc.
Joy is the National Food Microbiology Supervisor for EMSL Analytical in St. Louis, MO. She has experience in the food and beverage industry, environmental and industrial hygiene industry, and clinical as well as academic research fields. Joy is a Certified Food Safety Professional, a Registered Microbiologist through ASM in Food and Dairy Microbiology and she is also a Certified National HACCP Team Member.
Dr. Brenda Stahl, Ph.D, - President, BBCMicrobial Solutions
Brenda has 7 years experience in the Food and Beverage Industry as an industrial microbiology consultant. She spent 3 years as the Director of Microbiology at AIB International, and serves on several FDA and USDA outreach committees tasked with directing FSMA compliance. Brenda’s areas of expertise include environmental monitoring, HACCP, sanitation program guidance, sanitizer use and efficacy, allergen control as well as product development and formulation. |
